This course covers regulations and budgeting, food safety practices and meal planning principles, modified and supplemental diets, the four pillars of food safety, and common food safety myths. Allen Power MD, who is a board-certified internist and geriatrician. The course is centered around Dr. Power's first book, Dementia Beyond Drugs, which was named Book of the Year in 2010 by the American Journal of Nursing in Psychiatric/Mental Health Nursing. Additionally, Dr. Power's second book offers an experiential perspective on dementia rather than a medical one.
